30 November 2013 – A total of 22 IMU staff and their families as well as IMU students had a wonderful time cooking up some healthy recipes at the Nutrition & Dietetics laboratory. The theme was ‘Foods for Healthy Eyes – Preparing Foods that nourish your Sight’. The healthy cooking class was conducted by Ms Goo Chui Hoong, a Senior Adjunct Lecturer at IMU. Ms Goo is a dietitian and a culinary instructor. Her book “Food for Your Eyes” clinched the prestigious World Gourmand Cookbook Award 2013. The class was conducted in a simple, relaxed and intimate manner. Ms Goo started by giving a 15-minute talk on the overview of foods and nutrients that are important for eye health. Then, the participants got together in their assigned groups and started cooking! Ms. Goo first demonstrated the techniques and ingredients for a particular recipe and moved from group to group to observe and guide the participants. All the participants then enjoyed a scrumptious meal of tea smoked salmon, Vietnamese spring rolls and sweet potato onde-onde with walnut filling. Everyone present that day had thoroughly enjoyed their Saturday morning at the cooking class.For our expatriate participants, it was a wonderful time learning to prepare some local foods; for participants who brought their children along, it was a time of bonding and spending quality time together; and above all, a great way to learn healthy ways of food preparation that is simple, quick and tasty. After the success of this debut cooking class, the Division of Nutrition & Dietetics looks forward to introducing a series of cooking class with varying themes come year 2014.
